Dorothys Classic Tater Tot Hotdish
Ingredients:
1 lb ground beef (or turkey for a lighter version)
1 medium onion, finely chopped
1 can (10.5 oz) cream of mushroom soup
1/2 cup milk
1 can (14.5 oz) green beans, drained
1 can (14.5 oz) corn, drained
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder (optional)
2 cups shredded cheddar cheese
1 (32 oz) package frozen tater tots
Instructions:
1. Preheat oven: 375°F (190°C). Grease a 9x13-inch casserole dish lightly with butter or cooking spray.
2. Cook the meat and onion: In a skillet over medium heat, cook the ground beef and chopped onion until the meat is browned and onions are softened. Drain excess fat.
3. Mix the base: In a large bowl, combine the cooked meat and onion, cream of mushroom soup, milk, green beans, corn, salt, pepper, and garlic powder (if using). Stir until everything is evenly coated.
4. Assemble the hotdish: Spread the meat and vegetable mixture evenly in the prepared casserole dish. Sprinkle 1 cup of shredded cheddar cheese over the top. Arrange the tater tots in a single layer on top of the cheese.
5. Bake: Place in the oven and bake for 3540 minutes, or until the tater tots are golden brown and crispy, and the casserole is bubbly.
6. Add remaining cheese: Sprinkle the remaining 1 cup of cheese over the tater tots, and bake an additional 5 minutes until melted.
7. Serve: Let it cool for 5 minutes before serving. Serve with extra ketchup, hot sauce, or sour cream if you like.

Tips from Dorothy:
For extra flavor, add a few dashes of Worcestershire sauce to the meat mixture.
You can swap the green beans or corn for peas, carrots, or whatever veggies you have on hand Fargo style!
Leftovers heat up well for lunch the next day sometimes even better after the flavors meld overnight.
