What's for Dinner, Fri., May 2, 2025

Found some beautiful fresh organic asparagus when I shopped this morning, so I've decided to make a recipe I originally tried from the NY Times years ago. Found it in my recipe file: Lemony Orzo with Asparagus & Garlic Bread Crumbs. Hope it's as good as I remember.

Ginger kombucha.

Dessert: cherry filled pastry bites.

2. Broiled lamb chops and rice

Aldi had lamb chops 50% off, so I got a 4 pk. Broiled 2 and roasted a few mushrooms in the underpan. Heated up some rice I cooked yesterday. I got some fresh strawberries, too and had some for dessert. I was going to have some peas, too, but no room.

Loretta is down at the garden planting onions, radishes, etc etc. We planned to have ribeyes and yellow morels for dinner. I was putting my little tractor away and she said we're going to have the steak and morels tomorrow night.

So I'm grilling a pork steak in the airfryer and baking a sweet potato in the microwave. Salad is made up and all I need to do is add cucumber, egg, rasins, cheese and honey mustard dressing.

Congrats on getting all that done. I know it was a lot of work.

I focused on filling an elevated raised bed; didn’t finish.

I'm cooking late. Chicken and bowtie pasta bake with mozzarella. I've made it once before and it was delicious. It should last for a couple of days.

I wish there was a way to freeze it, but I don't think it would be as tasty after being frozen. If anyone has any ideas, I would love to hear them

Chicken and Pasta Casserole: Quick and Easy Dinner Recipe

This creamy chicken pasta combines all the best flavors and textures into one satisfying bite and is the perfect easy weeknight dinner!

Here are the Ingredients You’ll Need:
8 oz. bowtie noodles, cooked al dente (Farfalle Pasta)
8 oz. block cream cheese
4 cups shredded cooked chicken
1 cup chicken broth
8 oz. pasta sauce
4 T butter, divided
2 T minced garlic
1/4 tsp onion powder
1/4 tsp garlic powder
2 cups colby jack cheese, divided
3 T parmesan cheese (shaved or grated is fine)
1 cup mozzarella cheese

How to Make This Recipe:
Lay the cooked bowtie pasta pieces in the bottom of a greased 9×13 glass baking dish pan
Make an empty spot in the middle of the bowtie noodles
Place the block of cream cheese in the middle of the bowtie noodles
Layer shredded chicken on top of noodles and cream cheese
Pour chicken broth onto noodles, chicken and cream cheese mixture
Pour pasta sauce on top of layers
Cut butter into multiple smaller tabs and place on top of prepared casserole
Drop minced garlic in small increments around casserole
Sprinkle onion powder, garlic powder and one cup of the colby jack cheese on to casserole
Stir mixture (going around the cream cheese) and sprinkle remaining one cup of colby jack cheese on top of casserole
Top with parmesan cheese
Bake for 15 minutes at 350 degrees
Once heated through give it a good stir to mix all of the flavors around
Add mozzarella cheese to the top of the prepared casserole, broil in the oven for 2-4 minutes

Notes:
For added flavor, season the chicken with a teaspoon of Italian seasoning.
Substitute penne or another pasta dish if bowtie pasta isn’t available.
Adding a touch of fresh basil and parsley enhances the flavor profile of this creamy bowtie pasta recipe.

Bean mixture is somewhat Italian-theme, with ground meat, tomato sauce, garlic, pepper flakes and the like. I wanted to use white beans, but found I didn't have enough so I used pintos. Cheese and parsley to top the plate.

I really thought I had a half-gallon jar of navy beans. It may turn up later, but now I have a new one. Two won't hurt, if I find the other one.
