What's for Dinner, Wednesday, June 18, 2025

Cold cream of leek-cauliflower soup with rosemary and rye croutons. Pancetta crisps on top, too.

Cold salmon salad. Chopped Sockeye salmon with tomato, red onion, celery, and cucumber. Served over ruffly lettuce. Has light mayonnaise dressing with fennel seed sprinkled over the top.

Cherry-ginger kombucha.

75 to 100 mph and hard rain. Blew tree branches down all over my property. Moved our picnic table over 30 feet and damaged it. I see this storm has now entered Ohio. Be careful iris.

Midwest summer storms can be an outright bad time

Summer storm shelf-jugs of water, manual can opener, paper plates& spoons, matches, candles.
Actually like the winter storm shelf w/o the hoodies & heat reflecting blankets.

First time I air-fried salmon and it was delicious. I used 2- 6oz sockeye salmon fillets basted with Dijon mustard and seasoned with garlic powder, paprika and S&P. Then I sprayed the fillets with olive oil and air-fried them at 400 degrees for 9 minutes. They were perfect and I didn’t have to turn on the oven! Also had steamed asparagus with sliced mushrooms and microwaved sweet potatoes. Cheers!🥂

AKA leftovers. I had leftover raw pork sitting in the marinade. I cut it up and stir-fried it with green onions and a baby bok choy. Served it with leftover rice. It was delicious.

I think I can see a little shelf space in the fridge now.
