I came up with an interesting way to have corn on the cob with the most delicious topping (not butter).
I'm having this tonight and also tarragon-lemon chicken. The chicken is in one of those carved out hard rolls (boule', small).
The corn is cooked in the microwave for 4" in the husk. It is wrapped in a damp paper towel. Upon removing it from the microwave (with a hotpad), cut the end off and slide out the ear of corn. So simple; then throw the cob and husk in the composting.
This is the topping:
Cojita or feta cheese
Mayo
Lime
Hot sauce
Red pepper flakes
Any herbs like cilantro or elote
Mix and put a small amount on each bite from the ear of corn.
Kombucha: blueberry basil
Dessert: vanilla ice cream topped with organic, no-salt cashews.

(36,594 posts)...itself made last night to use up leftover roast beef. Cooking for two is tough-- I nearly always have two or three dinners worth no matter how much I try to manage the portions. Open one canned ingredient or thaw something frozen and you're instantly cooking 4-6 servings. It doesn't help that we eat less than we used to. Sigh. But at least the leftovers are tasty!
It's been a long time since I've seen a post from you on this thread.
I was going to comment on the topic you bring up, which is managing portions. It's taken a long time for me to be able to do this, but I'm now using recipes more as a source for ideas. I usually halve it because it is nice to have a few items in the 'frig for when I'm too busy to cook or for lunch the next day. I'll bet posters here have all kinds of ideas on how to manage portions, so I'll be starting a thread on it in the next few days.

(18,774 posts)I had some Genoa salami and pepper jack cheese with a few saltines for an appetizer.
Stir fry with slices of left over roast pork tenderloin with vegetables from a frozen package (snow peas, spring onion, carrot etc.) plus a small bell pepper from the garden (first of the year). TJ used a ready made sauce packet. I think it was for beef and broccoli according to the label.
Ducky expressed concern that he wasn't getting salami or cheese. He sat next to me doing his best good boy act. Sitting and staring at me then giving a quick wag every time I looked his way. He had a tiny bit of each and a corner of a saltine. "No more," I said and he just walked away. Maybe that good boy sitting wasn't just an act.
you got yourself the real thing there: a genuine, 100% pure "good boy!"

All in all, we really lucked out with this one.

(1,442 posts)Very bush day painting my back deck and the foundation of our house so we ordered takeout from our favorite Chinese restaurant. Had steamed mixed veggies and tofu with garlic sauce
on the side and steamed snow peas, water chestnuts and shrimp with black bean sauce on the side. I declined the white rice which came with the entrees while back at home my wife made fresh organic brown rice while I was picking up the food. Cheers! 🥂
