WonTon muffin lasagna

I get a recipe by email 4 times a week from the WaPo. This has helped me break out of ruts. This started with their recipe.

Wonton lasagna. Use a muffin tin and spray oil the holes, I lightly oiled one side of 12 wrappers and they went oil side down into the muffin holes. I then put in a teaspoon of pizza sauce from a 400 ml can, marinara was called for. I had some gorgonzola so a small piece went in also. Then one more layer of wrapper. Followed by a few frozen peas and carrots, a little shredded cheese and another teaspoon of sauce. My wonton package had 3 sheets left so I cut them into quarters and dropped one on each lasagna. Then one more teaspoon of sauce, which conveniently used the last of it, more shredded cheese and another bit of gorgonzola.
Into the oven for about 15 minutes at 350. Until tops browning and bubbly.

These look like they would be good for parties and can be served at room temp.

Lots of ways to play with the fillings. Mine were veggie but a meat sauce would work, pieces of peperoni etc.

I've done this technique for years, but, I use spinach tortilla wraps. I need to watch my nutrition.
