I got some pumpkins for the seeds

My Mom used to roast the seeds, and I've roasted the seeds for my kids for many years. I'm roasting the pumpkins and will freeze some of it. I have several good recipes and with the holidays coming up, it'll come in handy

use pumpkin for loaf cakes, pancakes, scones, pie and soups.

I found a big Candy Roaster squash - makes the best pie!

The amount of seeds I got from the 2 pumpkins probably won't make a lot.

I made a pumpkin souffle. It's been a few years. It was low carb, took 4 eggs for the full size. I might make a batch of it.

Thanks for the good ideas. I'll probably bake other pumpkin treats. I don't think I would like any kind of squash soup. Just me

I'll soak them, maybe over night, then spread them on a cookie sheet, cover with salted water, then roast until the water is completely gone. I think there are quicker ways to get them done, but that's how my Mom showed me.

Let us know if you find out about the air fryer

My favourite time of year is when TJ’s has their pumpkin roasted pumpkin seeds—roasted with a sweet and spicy (cinnamon, cloves, whatever) glaze. I always buy tons because they only have them for a month or two in the fall.

Heads up: I learned the hard way that they do have a laxative effect… Best to stick to a handful at a time rather than gorge yourself on them.
