What's for Dinner, Sun., May 17, 2026

Falafal served with finely chopped greens, diced cucumbers, cilantro, and scallions.

Baba ganoush from an eggplant I put in the slow cooker. I'll have fresh parsley from my garden for it, too! Serving this with pita bread and lemon slices.

Excited about this meal. I love Mediterranean food.

Kombucha: blueberry basil.

Dessert: Prob'ly won't make it this far but if I do, fresh organic strawberries with honey-vanilla Greek yogurt.
Cold tea. It's hot here (88) but still cool in my house, which is in a forest.

Everything is quiet here. Hardly any cars. Everyone must have gone to the shore for the weekend.

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, cut green beans, sliced water chestnuts and minced garlic. When done I added peanuts, Kung Pao sauce and air-fried tofu cubes. Served with organic brown rice. Cheers!🥂

8. Cube steak

I have always made cube steaks the way my mother did, frying them in butter and topped with Worcestershire sauce. Dry and chewy but delicious. I recently learned you can make them in a slow cooker (instant pot) and that's what I did tonight. I sliced one white onion and a pound of button mushrooms and layered my instant pot with onions/mushrooms and (seasoned) steaks. I mixed a can of cream of mushroom and a can of French onion soups with beef broth and poured this mixture over the layers. I sealed up the instant pot and cooked this on high for about four hours.

After this I pulled the steaks on the side and thickened my gravy with a corn starch slurry. The steaks came out moist and kind of tender (not quite tender enough for the wife, alas) and really, really tasty. I served the gravy over egg noodles and had some steamed (frozen) corn on the side.

Yeah, I gave my new oven the night off. Really hot in Chicagoland tonight.

I’m too lazy to cook from scratch and I think the only ready-to-heat ones I have in the freezer are TJ’s dill pickle falafel… I might have to opt for hummus instead, but this is going to bug me until I can find the oomph to mix up a proper batch.

Of course, we just did a shopping trip and like the children we are, rewarded ourselves by splitting a Snickers bar and a big Arizona Rx energy drink so who know when or if dinner will even happen tonight.

But I have found I love chickpeas so much that I’m always cooking up a batch.

I have 3 bags of dried in my pantry!

Sometimes I read your posts to my culinary friends and they say they don’t feel like cooking after shopping either. 😱

I have an Instant Pot, so there should be no excuse… And yeah, I second the love of chickpeas! Always have a few cans on hand for times I’m really lazy but with the IP, it’s almost as easy—an hour and they’re done.

Son has requested chili next because I bought red beans and he discovered it’s the third bag on hand… Will toss in a bag of roasted sweet corn (so he doesn’t notice we have two more in the freezer), half a jar of pickled jalapeños, and I should be off the naughty list. *snicker*
