But I've never had the nerve to use all those egg whites in one recipe, or known what to do with that many leftover egg yolks.

I've made marshmallow, but not often. I made it once on a dare from DH's little son, egged on by DH. "You can't make marshmallows!"
Time passes and a pan of marshmallow appears.

Then I found out I didn't have any powdered sugar to toss them in. I suggested coconut or toasted coconut. No way - only powdered sugar would do. Off to the store I went, only to return and find out my trip was unnecessary. DH and son had decided that coconut sounded pretty good after all. They couldn't choose between plain or toasted, so they did both, mixed them and used the mixture. They were munching their way to an impressive sugar high when I came in the door.
